Ingredients
  

  • 2-3 lbs whole chicken
  • kosher salt
  • fresh ground pepper
  • ½ lemon
  • 3 sprigs rosemary
  • ½ medium onion
  • 2 garlic clovers
  • melted butter optional

Instructions
 

Saltwater Brine (Optional)

  • Remove any chicken parts from the cavity of the chicken.
  • Fill a large bowl with water and add 3 tablespoons of kosher salt.
  • Place chicken in saltwater and cover then place in the refrigerator for 4-6 or up 24 hours.

Air Fryer Rotisserie Chicken

  • With the roast setting preheat the air fryer to 350 degrees.
  • With a paper towel pat down the chicken to remove any excess moisture from the skin.
  • Salt the chicken skin and inside the cavity. Also, add fresh ground pepper to the skin and cavity.
  • Fill the chicken cavity with the lemon, rosemary, onion, garlic.
  • Truss the chicken. (optional)
  • Place chicken in the air fryer basket without the crisper plate and roast for 45 minutes or until internal temperature is 165 degrees.
  • Brush cooked chicken with melted butter. ( optional)
  • Allow cooked chicken to rest for 10-15 minutes then serve.
